When the parish significantly overestimates how many will come for Good Friday, when can the extra consecrated hosts be placed in the tabernacle in the church?

A: You just do what you can do. If you have an auxiliary place to keep them, such as a secure spot in the sacristy, that is fine. If not, then they may have to go to the tabernacle.
