Q: Our cantor reads from an ipad device to sing the responsorial psalm. This just doesn’t seem appropriate to me with all our sacred texts bound beautifully. Am I overreacting?

A: I have to be honest here. Many of the cantors in my parish do the same thing. I use an electronic device for preaching. We invite people in the congregation to find the participation aid on their devices. In many parishes, the words of the psalm are projected onto a screen for all to sing.
It’s fair to ask your question in that the psalm verses are sacred texts. The introduction to the lectionary for Mass says “the books should not be replaced by other pastoral aids” (37). However, a sung psalm almost always requires using some music book besides the lectionary.
To your question, “Am I overreacting?” Well, if so, it’s out of a good concern. But at Mass I try to focus on the words of the psalm, not the instrument that holds them.
