In 2018 the Luke Emmaus story (Lk 24:13-36) was an option for the gospel on Easter Sunday. In 2019 that option is not shown on the USCCB site. Is this Luke reading still an option or has that been eliminated by USCCB in the past year?

Not sure why the USCCB web site does not include the Emmaus story, but you’re right. It’s not there. http://usccb.org/bible/readings/042119.cfm
However, on another USCCB site, the ordo, you can find the correct list of options. http://www.usccb.org/about/divine-worship/liturgical-calendar/upload/2019cal.pdf
Both these sites derive from the lectionary, which gives you the correct current law.
